Before Birds Eye Hollow became a distillery, we began as a maple syrup farm, harvesting sap from our maple trees and turning it into small-batch syrup using time-honored practices. Our sugar shack itself tells that story. Built to serve generations of sugaring seasons, it has weathered years of hard work. One of our projects this year is thoughtfully updating the sugar shack while preserving its original structure, character, and history. These updates allow us to continue producing quality maple syrup while honoring the craftsmanship and tradition that came before us.
